First you should fry onions, carrot and celery. You will definately need GARLIC, add this next and fry for another minute.Then top up with enough stock and add your other veges and pasta. Make sure you use oregano too. I have also found that (and this is my secret ingredient) cabbage is great in minestrone. I don't use potatoes but they might be ok. You can also add some parmesan to the soup when you serve it.
