If a recipe calls for oil in it to cook onions, can I skip it?

I found a recipe for spicy red lentil daal. It says to use a tbsp. of oil to cook onions, garlic, and ginger. Could I just skip that step? I want to get away from oil completely and find healthier ways to cook other than using oil. Will this affect the finished product though?
